
Carrot comes in various size, shape, and colors. It is the most cultivated vegetable worldwide. Its global production reaches up to 20 million metric tons in 2017 and is available in the markets all year round.
Carrot is rich in carotene, a precursor of Vitamin A, fiber, Vitamin B, and Vitamin C. It is thought to prevent cancer and is also low in calories.
