 Jackfruit tree bears fruit at three years old. But the precise time to harvest is important if you want it sweet and tasty.This fruit oozes with sticky latex that, when harvested it too early, may result in a mess. As it ripens, the latex it produces lessens; the riper the fruit, the less of a mess. Meanwhile, picking it too late would make it deteriorate rapidly.
When tapped, an unripe fruit will have a solid sound while a mature one will create a dull hollow noise. Another indication of a mature fruit would have spines that are well-developed, spaced, and slightly soft. Ready-to-pick fruit will produce a fragrant aroma and the last leaf of the peduncle will yellow. (gardeningknowhow.com)
