This fruit oozes with sticky latex that, when harvested it too early, may result in a mess. As it ripens, the latex it produces lessens; the riper the fruit, the less of a mess. Meanwhile, picking it too late would make it deteriorate rapidly.

When tapped, an unripe fruit will have a solid sound while a mature one will create a dull hollow noise. Another indication of a mature fruit would have spines that are well-developed, spaced, and slightly soft. Ready-to-pick fruit will produce a fragrant aroma and the last leaf of the peduncle will yellow. (gardeningknowhow.com)
