Spices and seasonings instantly elevate the subtle flavors of vegetables, legumes, whole grains, and plant-based proteins as well as help recreate the taste and aroma of classic meat-based dishes.

One example is adobo—the ultimate all-purpose seasoning. Although it is traditionally used with animal protein, the right blend of garlic, salt, oregano, black pepper, and turmeric can give a similar savor to plant-based dishes such as tofu and vegetarian stews.

Another is shichimi togarashi, a complex spice blend adorning the tables of many Japanese food shops. Sprinkle this on noodles, fried rice, soups, marinades, tempuras, and roasted vegetables among others to add flavor, spiciness, and aroma. (The Monday Campaigns)
